Orzo Pasta Salad with Baked Mushrooms

For the pasta:

  • 450 grams of orzo pasta
  • 1 tomato, chopped
  • 1 cucumber, chopped
  • ¼ green onions, chopped
  • 1 carrot, grated or chopped
  • ½ cup feta cheese, crumbled
  • 50 grams of cilantro/parsley, chopped1 lemon juice

For the dressing:

  • 2 Tablespoons olive oil
  • ½ teaspoon salt
  • 2 Tablespoons lemon juice

For the mushrooms:

  • 5 oz. white button mushrooms, scrubbed and stems removed.
  • Tablespoon butter, cut into small pieces.
  • 1/8 teaspoon salt or to taste

Prepare pasta according to package instructions. In a large mixing bowl combine drained pasta with chopped tomatoes, cucumber, carrot, onions, and feta cheese. Add the dressing. Refrigerate until ready to serve.

Preheat oven to 425 F. Put a few pieces of butter in every mushroom, sprinkle with salt. Bake 25-30 minutes or until tender.
