Ingredients:
For the pasta:
- 450 grams of orzo pasta
- 1 tomato, chopped
- 1 cucumber, chopped
- ¼ green onions, chopped
- 1 carrot, grated or chopped
- ½ cup feta cheese, crumbled
- 50 grams of cilantro/parsley, chopped1 lemon juice
For the dressing:
- 2 Tablespoons olive oil
- ½ teaspoon salt
- 2 Tablespoons lemon juice
For the mushrooms:

- 5 oz. white button mushrooms, scrubbed and stems removed.
- Tablespoon butter, cut into small pieces.
- 1/8 teaspoon salt or to taste
Prepare pasta according to package instructions. In a large mixing bowl combine drained pasta with chopped tomatoes, cucumber, carrot, onions, and feta cheese. Add the dressing. Refrigerate until ready to serve.
Preheat oven to 425 F. Put a few pieces of butter in every mushroom, sprinkle with salt. Bake 25-30 minutes or until tender.
