Super Healthy Energy Bars and Energy Balls for Long Trips

1/2 cup cashew or any other butter
2 teaspoons cocoa powder
1 teaspoon coconut oil
1 Tablespoon chia seeds

1/4 teaspoon cinnamon

1/2 teaspoon vanilla extract

1/4 teaspoon nutmeg
2/3  cup old fashioned oats

6-8 medjool  dates, pitted
1/2 cup dried cherries (no sugar added)
1/2 cup of dried apricots (no sugar added)

1/4 cup walnuts

For rolling/garnishing

1/4 cup coconut flakes

1/4 cup muesli


In a food processor combine all ingredients and pulse until crumbly and you can squeeze the mixture in your fingers and have it stick together.

Use a tablespoon or a small scoop to form the balls.

Alternatively line the parchment paper in a baking pan, add the super food mixture and press with hands. Cover and refrigerate for two hours. Cut and make bars or fingers (good for baby led weaning beginners) . keep refrigerated for up to one week.
