Ingredients:
- ¼ cup flour
- 1 cup rolled oats or oat grains, grinned in a blender
- 0-2 tablespoons coconut sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon cinnamon
- 2 eggs, slightly bitten
- 1 carrot, grated
- ½ teaspoon vanilla
- 1 cup Greek yogurt (I used regular plain yogurt without the liquid part)
- 1-2 tablespoons milk (if dough is too thick )
- Butter / or coconut oil, for frying

Preparation:
In a separate bowl mix together egg, carrot, vanilla, yogurt, milk. Add the dry ingredients in a bowl, mix together and add to wet ingredients. Grease the frying pan lightly with oil. Cook for 2-4 minutes for each side or until golden bubbles appear.
