Oatmeal and carrot pancakes

Ingredients:

  • ¼ cup flour
  • 1 cup rolled oats or oat grains, grinned in a blender
  • 0-2 tablespoons coconut sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • 2 eggs, slightly bitten
  • 1 carrot, grated
  • ½ teaspoon vanilla
  • 1 cup Greek yogurt (I used regular plain yogurt without the liquid part)
  • 1-2 tablespoons milk (if dough is too thick )
  • Butter / or coconut oil, for frying

Preparation:

In a separate bowl mix together egg, carrot, vanilla, yogurt, milk. Add the dry ingredients in a bowl, mix together and add to wet ingredients. Grease the frying pan lightly with oil. Cook for 2-4 minutes for each side or until golden bubbles appear.
