Ingredients.
- 1 Tablespoon oil (preferably with medium or high smoke point)
- 1 pound ground beef
- 1/2 medium onion, roughly chopped/grated
- 1 glove garlic, chopped or /1/2 teaspoon garlic powder
- 1/2 green pepper, finely diced/grated
- 1/2 celery stalk, finely diced/grated
- 1 carrot, finely diced/grated
- 0-1/2 teaspoon salt
- 1 teaspoon yellow mustard
- 1/4-1/2 cup tomato sauce or 2 grated/ finely diced tomatoes
- 1/8 teaspoon black pepper
- To serve
- Whole wheat or white buns
- Vegetables or just lettuce for the buns
- Cheddar slices or any other kind of cheese you prefer

Instructions
Heat the oil in the saute pan over medium heat. Add the onion and garlic, cook for one or two minutes. Add the carrot, celery, bell pepper and continue to cook for another 2 minutes. Add the ground beef, pepper and salt, mustard. Cook until the meat has browned all the way through. Add the tomatoes or tomato sauce to the pan and simmer over the low heat for about 10 to 15 minutes. Serve warm with toasted buns.

For the Sweet potatoes
Ingredients
- 2 medium sweet potatoes, scrubbed clean
- 1 teaspoon cinnamon, divided
Instructions
Preheat oven to 425 F (220 C). Poke sweet potatoes with a fork. Bake for 45-50 minutes or until fork tender. Split the tops open with a knife. Add your favorite toppings. We like cinnamon, cheese, butter, Greek yogurt or just plain as delicious as it is.
For the farro pilav
- 1 cup farro, rinsed, soaked for an hour
- 3-4 cups water
- 1 Tablespoon olive oil or butter
- Salt to taste
Instructions
Add the farro to water, cook for 50-60 minutes. Add the oil or butter after turning off the heat, mix and serve.
