The Best Borshcht Recipe

Preparation time 20 minutes
Cooking time 50minutes-1 hour
Total time  1 hour 20 minutes


1 lb. Beef short ribs, previously cooked. You can also use beef chuck roast or any other part you have on hand*
1 Tablespoon oil
2 carrots
1 beet
2 cups of cabbage, shredded
2 medium potatoes
1 cup tomato sauce
1 bay leaf
4 peppercorns
Salt, pepper to taste
1/2 cup cilantro, chopped +1/4 cup for serving
Optional, sour cream for serving


Chop carrots, cabbage, beet into cubes. Alternatively you can use food processor or grate all the vegetables.
Add the oil and water to the large   pan.
Add the chopped vegetables and cook for about 5 minutes with  closed lid.
Add the rest of the ingredients except for cilantro.
Simmer on low heat for about an hour or until the cabbage is tender.
Add the cilantro and turn off the heat.
Serve with  cilantro and sour cream


The most delicious borscht is made with bone in meat.
If you prefer deep red colored soup keep a few beet cubes and add them right before the soup is done. Also it depends on the kind of the beets you use. Choose the deep red colored ones.
